Hot Cross Bun Porridge // Recipe


Happy Easter everyone!! To prepare for the day of chocolate scoffing ahead (and all of mums hot cross buns being scoffed good Friday) I thought I’d start the day on a new healthyish porridge idea – Hot Cross Bun inspired! This porridge has cinnamon, mixed spice, orange zest, currants and apple; much like you’d expect to find in the classic sweet bread this time of the year. I also substituted a few tbsp of oats for quinoa for an added protein kick but feel free to leave them out (or make the entire thing with quinoa if you want).4

Serves 1

1/2 cup oats
1/2 cup milk of choice
1/2 cup water
1 diced apple
1/4 cup dried fruits (I used currants)
1/4 tsp cinnamon
1/4 tsp mixed spice
1 tsp orange or lemon zest
1 tsp sweetner (honey/maple syrup)
1 tsp almond butter (optional)3 Chopped nuts to finishStir the first 9 ingredients in a small saucepan on a medium heat, then simmer on low for 15 minutes until the consistency u want.

Add in the almond butter if using, and a pinch of salt, have a little taste test adding more spices/sweetner if needed, then serve.

Sprinkle over the chopped nuts to create a cross, drizzle over some more sweetner (I found maple syrup nicest in this) then enjoy – along with mountains of chocolate later on!6
