1 Pan Quinoa, Cashew and Vegetable Stir Fry // Recipe

Serves 2 (smallish)

1/2 cup quinoa

1/3 cup raw cashews

2tsp oil (olive, coconut, sunflower etc)

1/8tsp cayenne pepper

1/8tsp paprika

1/8tsp curry powder

1 garlic clove, minced

1 bag stir fry veg

OR

1/2 red pepper, sliced

1/2 green pepper, sliced

1/2 small onion, sliced

handful (about 100g) bean sprouts

1 medium carrot, thinly sliced

handul (about 50g) green cabbage, sliced, broccoli, or spinach

Heat your oil in a large pan/wok on a medium heat, add the onion, carrots, garlic, and fry for 5 minutes and the onions start to soften.

Add the rest of the vegetables, quinoa, cashews, spices and cook for about 10 minutes, until everything is hot and then serve!
