I had a bag of stir fry sitting in the fridge for probable far longer then it should have I’ll be honest, and as much as I love my quinoa and cashew stir fry, this time I wanted to keep it a bit lighter. Scrolling through youtube yesterday morning I stumbled across a burrito like omelete on youtube; and so this was created.
Serves 1
1tsp oil (coconut, olive etc will all work)
2 eggs
1/2 bag stir fry vegetables.
1/2 chilli, slices
1 garlic clove, diced
1tbsp soy sauce
1tsp tomato puree
1tsp apple cider vinegar
In a small wok (a regular pan will work, just try to find one with rounded edges to make it easier to roll), melt the oil then add the chilli, garlic and vegetables. Fry for 3 minutes until just cooked.
Put the vegetables on a plate, then whisk the eggs and add to the pan. Move around so the eggs create a thin circle.
When its just cooked, add the vegetables in a bundle in the middle, and using a slicer (and you’re fingers) pull over the sides.
Whisk together the soy sauce, puree and vinegar, sprinkle over the omelete and finish with a garnish off some black pepper, extra chilli and sliced spring onion. You could also add some peanuts or cashews on top for some extra slice.
