One Pan Spicy Veg, Beef and Egg // Recipe

This ‘recipe’ is one I eat on a near daily basis. It’s perfect for breakfast, lunch or dinner, and you can mix and match any ingredients for whatever you have in the fridge. If having for breakfast, I imagine most people would leave out the beef (I like it, but maybe as Quorn doesn’t have quite the same ‘meaty’ taste), and substitute for another egg. Any veg will do really, I often chuck in some kale, courgette, mushrooms etc, so today’s was just what I had in the draws. You can also change the spice according to your tastes, completely leaving it out altogether or adding a whole chilli if you really fancy it!

2tsp oil (coconut or olive)
1 spring onion
1 garlic clove
1/4 green chilli, deseeded
1/2 small red onion
1/4 yellow pepper
1/4 red pepper
5og beef strips (I use Quorn)
2 handfuls of spinach
small handful of frozen peas (around 40g)
1 medium tomato
1 medium egg

spices (very approximately):
1/4tsp garam masala
1/2tsp miso paste
1/8tsp rosemary
1/8tsp oregano
salt + pepper
1/8tsp cayenne pepper

Finely dice the garlic, chilli, and both onions.

Heat the oil in a pan on a medium heat and fry off for a couple of minutes, followed by chopped pepper, beef strips, peas and spices, stirring constantly.

Add the spinach, chopped tomato, make a ‘hole’ in the middle and crack in the egg.

Cook until the egg is done to your liking, and serve!
