Dairy Free Protein Pancakes // Recipe

31 medium egg

1 egg white

1/2 banana

1 scoop protein powder (I use this pea protein)

3tsp vanilla

1/4 cup oats

1tsp baking powder

Topping ideas:

sliced banana

mango

mixed berries

soy yogurt

dark chocolate

stewed apple + raisins

cinnamon

maple syrup

Blitz the oats in a nutri-bullet (or food processor) until fine ‘flour’.

Add all the other ingredients and blend until smooth.

Add a teaspoon of oil to a large pan, place on medium heat for a few minutes, then pour in the mix. I made 4 smallish ones, and I’d recommend them over one large one as they can be quite hard to flip.

If your pan isn’t large enough to cook more than one at a time, keep the pancakes heated on a plate under the grill.
