1 tin chopped tomatoes
1 small green pepper
1tsp mixed herbs
1 small red onion, diced
1 clove garlic, diced (or 1 tsp garlic powder)
1/2 chilli/jalepeno, diced
squeeze of 1/2 lime
1 bunch coriander/basil (optional)
Finely dice the pepper, onion, garlic, chilli and coriander/basil if using.
Then stir in all the other ingredients, taste, adjust to your needs (you might want to up the spiciness even more, or even add a pinch of smoked paprika).
Then store in the fridge for up to a week.
I love serving this with nachos, pitta strips, and on burgers/sandwiches but the options are endless!
